Recipe: Warming Chicken Soup

Makes 4-5 generous servings
Ingredients:
3 medium carrots, diced
3 celery stocks, diced
1 small yellow onion, chopped
4 small chicken breasts, diced
2 cups of chicken bone broth
2 cups of chicken broth
1 tsp garlic powder
1/2 tsp oregano
1/2 tsp thyme
1/4 tsp turmeric
1 can of garbanzo beans (optional)
1 cup of frozen broccoli (optional)
Red pepper flakes (optional)
Avocado oil
Salt & pepper to taste
Directions:
Prep the ingredients - wash and dice produce and dice chicken. Rinse and drain garbanzo beans and set to the side.
Brown the chicken in a skillet with a tablespoon of avocado oil and season with salt and pepper to taste.
In a separate pot, sauté the carrots, celery, and onion in 2 tablespoons of avocado oil until fragrant and onions are translucent.
Add the chicken to the veggie pot.
Add the broth and spices. Bring to a boil and then simmer for 15-20 minutes.
If using, add in garbanzo beans and frozen broccoli. Simmer for another 10 minutes.
Taste the soup and adjust to taste with salt, pepper, and other spices.
Ladle into bowls and serve with toasted sour dough and butter. Save the leftovers for lunch or dinner tomorrow.
